Now, I have posted this recipe before, but I am pretty sure not on this blog, and even if it was, this time I have a MUCH better picture.
When Scott want’s cookies, these are the cookies that he requests. I doctored the recipe for him, knowing his love coconut, and cookies that stay soft and chewy for a few days, I know that these will ALWAYS be a hit with him.
1 cup butter, room temperature
1 cup brown sugar
1 cup white sugar
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2/3 cup each – milk chocolate chips, white chocolate chips, semi-sweet chocolate chips
1/2 cup shredded unsweetened coconut
Preheat oven to 350. In a medium bowl, cream together butter and sugars. Mix in the eggs and vanilla. Combine flour, baking soda, baking powder and salt; add to butter mixture and stir until just blended. With a large spoon, stir in chips and coconut. Drop by teaspoonful onto ungreased cookie sheet and bake 10 min. Cool on cookie sheet for 5 min, then transfer to cooking rack to completely cool. Store in airtight container, enjoy with milk!
