Chicken Parmesan ~ A classic dinner

This is one of those ‘go-to’ winter dinners that doesn’t take long to make, makes enough to have leftovers and is complete comfort food.

Normally I would write more, but I don’t have much to say today.  This weekend I am finally tackling something on the to-do list, painting our bathroom.  Scott’s going up to the cottage for a ‘boys bonfire’ so my dad was awesome enough to offer to come and help!  Which I will need, we have 11 foot ceilings, I am 5’6, do the math.  Ladder needed, Dad owns several!

Chicken Parmesan
4 boneless, skinless chicken breasts (pounded to 1/2″ thickness)
1 egg
1/2 cup of milk
Seasoned bread crumbs
8 slices of Mozzarella
1 16oz jar spaghetti sauce
Parmesan Cheese

Whisk together the egg and the milk.  Dip chicken in egg mixture and then in breadcrumbs.  In a skillet with a little olive oil, brown the chicken on both sides until golden brown in colour.  Place in a 9 x 13 pan, cover with mozzarella, pour spaghetti sauce over everything, sprinkle with parmesan cheese.

Bake at 350 for 25-30 minutes.  Serve over pasta.
