In March of 2011 I got laid-off from my previous employer. After about 3 days of lying around doing nothing I got bored and decided to bake some cookies for a birthday to kill a day.
The next week I baked more for another birthday, and for a house-warming gift, since then I have probably made well over 100 dozen cookies for all sorts of occasions and I am always excited about the next possible project. Like many bakers on the web, I am completely self taught, and love a new challenge. All cookies are baked in my home with an extra helping of sugar & love (and almond extract for those who might have an allergy) and quality control is handled by my husband who is always willing to eat any broken product.
A lot has changed since I started, I’m off on maternity leave and loving being a mom to my sweet baby girl, Sophie. It may mean that decorating cookies is a little more challenging now, but I still LOVE what I do.

I may be able to change your mind about that! lol Next week, I will be embarking on baking Dairy, Egg and Peanut/Tree Nut Free Vanilla and Chocolate Cupcakes for my son’s Grade 8 Graduation. I already provided the class with their Confirmation Cake in May and made my older son’s Graduation Cake for his class 2 years ago. I have been baking for these students and my older son’s classmates throughout their school years. I am not so sure they noticed any of the baking was ‘missing’ anything. It has been a challenging yet creative adventure I wouldn’t change for the world…everyone deserves to have a ‘special treat’! Susan H. @ The Food Allergy Chronicles
